Abstract: Development of combined, milk, milk-containing and composite milk products, available and consumed by the general public, allows increasing the volume of production and sales, which contributes to meeting the needs of the population in the "healthy " food. In carrying out this task, an important role is played by scientific research aimed at further implementation of advanced manufacturing technologies, intensification of technological processes, increase of production efficiency and quality control of fermented milk and milk products. The aim of the research is the development of technology and quality management in the production of fermented milk and milk products on the example of milk and cereal product.
